Reviews for Potluck Banana Cake
"Excellent! My husband who usually doesn't eat cake had 2 pieces tonite!"
"Just like Mom used to make! This was a family favorite back in the 1960s. I was delighted to find this recipe and try it out on my own family. It was a hit!"
"The only thing I'd change would be to use 2-3 tablespoons of fresh brewed strong coffee instead of instant. The coffee flavor is more than just a hint, so prepare for coffee lovers! I also think that a cream cheese frosting base with coffee flavor would be excellent . I want to try that next time I make this."
"There was no liquid in this recipe and it was flat, gummy and more like a cookie after it cooked. I will never try this again. Probably needed a cup of water or milk."
"This recipe was dense and would hardly rise. I, too, think it was the lack of baking powder.Heavy with moisture and barely done after an additional 10 minutes. I"ll stick with my old recipe."
"cake was easy enough but the frosting was WAY too sweet. I added some additional butter and substituted the coffee for vanilla extract (wife didn't want the coffee flavor) and it was still a bit sweet. I used the whipping beater for my mixer to lighten it up and, while a bit on the sweet side, it came out good. The cake recipe came out good and needed no additions or subtractions. I did use 3 bananas (I don't know if I'd call them medium) but they were very ripe and mixed right in. Alternating the banana, flour and sour cream was a mess-free way of incorporating the flour (which tends to bomb if the speed isn't just right)."
"I thought the amount of banana looked skimpy, so I doubled it. Very moist and fulfilling banana flavor. Next time I will try a caramel frosting, or none at all"
"I have made this cake twice now. One as the recipe says, then I made this cake but with some revising, since I am diabetic. I used a sugar substitute in place of regular sugar. I also used 1/2 of regular flour & half local wheat flour, which did not affect the taste. I also did not have enough sour cream & ended up whipping heavy cream, then adding it, and it tasted fine as well. My husband does not like coffee at all, so the frosting for his half of the cake was a cream cheese frosting and he loved it, the cake was a bit heavier & I am guessing from the wheat flour but was still "YUMMY"!"
"We love bananas, so this cake sounds good to me. One question....will the coffee granules dissolve in cold milk, or should I dissolve them in warm milk, and then cool it off before proceeding to complete the frosting?"
"Very delicious even with a canned cream cheese frosting since I had one that needed to be used."
"Great cake! Frosting is yummy!"
"Very good but tasted like banana bread with frosting."
"This is so good! I wasn't sure about the coffee frosting, but it is a good combination. Thanks for sharing!"
"Super quick - super delicious! Was ready to go in the oven by the time it preheated. Stayed moist and delicious! Cheated with a can of cream cheese frosting and it was just enough! Great dish for a party or crowd. It's a keeper!"
"Absolutely delicious! Moist & flavorful, & easy to make! I didn't make the frosting because I'm diabetic & all my kids have grown up with cakes without frosting (except for special occasions) & think they're too sweet with the frosting. Have to admit I was tempted to try it, though--sounds delicious! The cake alone is excellent! I'd add a little more vanilla next time, though, just to meet our tastebuds."
"You will have to try really good"
"I made cupcakes from the recipe, it makes about 15. They were absolutely delicious !!Such a simple, good basic recipe.......very moist, very flavorful. definitely a "keeper"."
"I made this for our annual neighborhood Labor Day party and everyone wanted to know who made the banana dessert. Instead of mashing the bananas, I put both the sour cream and bananas in my blender to have a smooth batter. I also added a cup of blueberries to the batter that gave the dessert a little more juiciness and tartness. I only used the frosting on half the cake for those who preferred without any extra sweetness. It is definitely more cake-like than bread. It is a keeper for sure."
"cake was awesome. I made a cream cheese with banana icing...it was a real hit for friends and family!"
"Everyone loved this cake and it was really moist. Will make again."
"Great taste unique frosting"
"Only two of the four in my family like bananas but the two of use that do like this cake. The sour cream makes it super moist. I used a vanilla bean cream cheese frosting for this because the two of use don't care for coffee. The banana flavor is a nice change to the typical white cakes at potlucks."
"Anything banana goes well with my family. Delicious cake, tender and moist. Will keep this recipe for a family favorite!"
"I also have made this recipie for many years in a 15x10 pan.....got the recipie card that I cut out of a previous Taste of Home magazine! I will substitute some banana extract for part of the vanilla for more banana flavor, I usually use a cream cheese frosting.....moist and delicious and easy to make!"
"I"ve made this cake before but added 2 tlb. of poppy seed to it. good recipe"
"Was fantastic and the icing really put it over the top!"
"For DEFILYER I would suggest several things to try, in order ,1) be sure your oven actually is at 350 F ,2) be sure you are using really ripe bananas, and ,3) since you made it once and it was too heavy: beat the eggs until quite foamy then add them to the thoroughly whipped butter and sugar, this incorporates more air which makes a cake lighter. It is also possible your baking soda is old (I don't know the scientific reason but if the box is open for a while it looses strength - maybe oxidation) so open a new box and try that. Finally, since you know how the batter looked and felt last time add a LITTLE milk if the batter seems to be as thick and/or heavy as last time. Hope these hints help. Delicious recipe and great use for bananas too old for fresh eating pleasure"
"I have made this for years..but I call it banana bars and make it in a 15 by 10 inch pan.Always turns out excellent. I frost it with bream cheese frosting. easy and delicious. Never fails!!!"
"didn't turn out well. didn't cook well through, very dense and heavy, doughy almost on the bottom not sure what I did wrong. seems most of the reviews are great. id try it again, but if I didn't get a great result second time, I will toss the recipie."
"Very tasty moist cake, everyone loved it!"
"Very moist and delicious! It's easy to make too. It'll be a go-to recipe when I need to use up very ripe bananas."
"Was very simple to make, my instant coffee was Irish Creame flavored this gave it a little bit of creamy taste to the frosting. cake was moist would make again"
"I made this cake last night and I LOVED it so much!!!! I couldn't stop eating it. What a fabulous recipe, I highly recommend it....."
"This was good the first day I made it but by the next day when the flavors had had a chance to mingle- it was absolutely delicious!"
"My husband requested a banana cake for his birthday. I'm so glad I used this recipe. The final product was delicious! He proclaimed it one of the best-ever birthday cakes.I substituted plain yogurt for the sour cream since that is what I had "on hand.""
"Not a very good recipe, the batter hardly rose. Im thinking its the lack of baking powder in the recipe. 1 star and I will never make this recipe again!"
"moist and flavorful"
"I've had this recipe for about 20yrs. A neighbor gave it to me & have been making it ever since. I changed mine a little. Only used 3/4 c sugar, used non-fat banana yogurt & baked in a 15X11" pan . I topped it w/chopped nuts before baking & omitted the frosting or just dust w/powder sugar. Cut into bars & it is the best banana bars I ever tasted."
"Happened upon this recipe again and HAD to make it. MMMMMMMMM delicious! This time I didn't have any instant coffee powder so I used espresso shot instead of the milk. Worked just fine and had a much more 'real' coffee taste!"
"I used plain yogurt instead of sour cream. It was great."
"This cake has a wonderful homemade taste. I give it 5 stars."
"Love this recipe! Was looking for something new to do with older bananas and came across this little GEM! I've made it several times since and it's been very well received no matter where I take it. It's such a great flavor combination- similar to coffee waking up the flavor of chocolate- it does the same for the bananas. Rich but light, and super delicious!!"
"Mad ethis and it's definitely tasty. A good alternative to blackened bananas other than the same ole boring banana bread! Frosting is deceptively good!"
"LOVE this recipe! The cake is very moist and fluffy, and the coffee frosting is to die for! I added a little extra coffee to make it a stronger flavor."
"I settled on this recipe after looking at several of the others, and I am not disappointed. I liked that it had just one cup of sugar, so the cake is not overly sweet, and I like the addition of sour cream for the moistness. I used light sour cream. I did not make the frosting--I don't think my crew would have liked the coffee flavor--so I just used store bought cream cheese frosting and added some yellow food coloring, which my 6-year-old and 4-year-old (who helped make the cake) thought was great. I will definitely make this a go-to recipe."
"Made this for a friend's birthday at work. It was a hit with lots of requests for the recipe."
"If you need something to do with those bananas that are just to ripe to eat, make this cake. It will be enjoyed by all!!"
"This cake was so delicious I will definitely make it again. My coworkers loved it. I changed the frosting to a plain cream cheese frosting and it worked wonderful."
"this cake is absolutely delicious-moist(although it didn't last very long). The coffee flavored frosting was the best. I have made this again & again & have given this recipe to others. I used expresso powder & did not dissolve before adding to powdered sugar. Nice kick.Would not have thought of combining the two flavors, but wow did it taste good. Thanks"
"The cake was good. I think it could have used a pinch of salt. I would make this again."
"Delicious!!!! Very moist, excellent flavor. Definitely a make again! Icing was great. Just enough flavor, but would be good with or without the icing. DELICIOUS!"
"I made the recipe just as written and wouldn't change a thing! I was worried that people who weren't coffee drinkers wouldn't like the icing, but it disappeared and many asked for seconds."
"TRYED THIS LAST NIGHT THE ICING WAS FINE IT ALL CAME TOGETHER PERFECT AND easy TO SPREAD. BUT WOULD NOT USE IT AGAIN. WAY TO SWEAT AND OVER TOOK THE TASTE OF THE cake. AND NOT USE TO BANANA cake WITH SOMETHING ON IT LOL, IS IT WORTH TRYING ?????? YES NEVER PASS SOMETHING UP JUST CAUSE SOME ONE ELSE DOESN'T CARE FOR IT. WE ALL HAVE OUR OWN TASTE. WHEN I MAKE IT AGAIN AND I WILL IT WILL BE PLANE CAUSE IT IS VERY MOIST AND YUMMY. SO TRY IT AND USE YOUR OWN JUDGMENT .YOU'LL BE HAPPY YOU DID!!"
"This was very tasty, however I had a real problem with the icing,,,,,had to add more milk to the powdered suger, butter and coffee granules just to be able to spread it on the cake. Think some of the ingredients were missing.?"
"This cake was great. This will definately go into our 'make again' file."
"My family loved this!"
"Excellent recipe - I subbed applesauce for the sour cream, reduced the sugar, increased the vanilla and used vanilla sugar. I baked in muffin tins at the recipe recommended temperature and they were perfect. Came out moist and delicious for breakfast and snacks."
"Took this to work today and got lots of compliments!"
"I cut the sugar to 1 1/2 C.and added walnuts to the cake. To a cream cheese frosting to I added 1/2 tsp. dried coffee. Loved the flavor."
"Suggestion for a lighter but really yummy frosting: Thaw an 8 oz. carton of Cool Whip per package directions. In a mixing bowl, whisk together a package of instant pudding mix (vanilla or choc.) and ONE cup of milk. Fold Cool Whip into pudding, combining thoroughly. Spread on cooled cake and ENJOY!"
"Great recipe...but....for those on Weight Watchers....one piece is 10 points."
"Simple, easy comfort food. I was going to jazz it up with toasted nuts or some almond flavoring but at the last minute decided to go plane Jane for the group I was feeding and it was the right choice. I subbed some dark brown sugar for a portion and used vanilla sugar for the rest. Was out if sour cream but subbed applesauce and soymilk and the muffins/cake are heavenly- full of flavor, moist yet ethereal -not dense at all-delicious plain."
"please help me! someone requested a recipe from me but I don't know how to answer them on taste of home site. i have tried several diff. ways but I am not comp. savy & can't send the person the recipe. pls. e-mail me with instructions, [email protected] thanks in advance"
"Have made this recipe from a different site; it had a different frosting. This is the best banana cake I have ever made, light and fluffy. I used thawed bananas from the freezer. Doesn't even need frosting, it is so moist and flavorful. A definite keeper (the recipe)."
"I work in an office with +20 guys, 2 asked me for the recipe and one said it was better than my homemade banana bread - from my Grandmother's recipe book."
"This cake was such a hit for my family & friends . that i was asked to make it for a pumpkin weighin party this weekend"
