Potluck Banana Cake Recipe

I found this recipe more than five years ago and have been making it for family gatherings ever since. The coffee-flavored frosting complements the moist banana cake. —Kathy Hoffman, Topton, Pennsylvania
TOTAL TIME: Prep: 25 min. Bake: 35 min. + cooling YIELD:12-15 servings

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1-1/2 cups mashed ripe bananas (about 3 medium)
  • 1 cup (8 ounces) sour cream
  • COFFEE FROSTING:
  • 1/3 cup butter, softened
  • 2-1/2 cups confectioners' sugar
  • 2 teaspoons instant coffee granules
  • 2 to 3 tablespoons milk

Directions

  • 1. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking soda and salt; add to creamed mixture alternately with bananas and sour cream, beating well after each addition.
  • 2. Pour into a greased 13x9-in. baking dish. Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool completely on a wire rack.
  • 3. For frosting, in a small bowl, beat butter and confectioners' sugar until smooth. Dissolve coffee granules in milk; add to butter mixture and beat until smooth. Spread over cake. Yield: 12-15 servings.

"Cake was easy enough but the frosting was WAY too sweet. I added some additional butter and substituted the coffee for vanilla extract (wife didn't want the coffee flavor) and it was still a bit sweet. I used the whipping beater for my mixer to lighten it up and, while a bit on the sweet side, it came out good. The cake recipe came out good and needed no additions or subtractions. I did use 3 bananas (I don't know if I'd call them medium) but they were very ripe and mixed right in. Alternating the banana, flour and sour cream was a mess-free way of incorporating the flour (which tends to bomb if the speed isn't just right)."

"I have made this cake twice now. One as the recipe says, then I made this cake but with some revising, since I am diabetic. I used a sugar substitute in place of regular sugar. I also used 1/2 of regular flour & half local wheat flour, which did not affect the taste. I also did not have enough sour cream & ended up whipping heavy cream, then adding it, and it tasted fine as well. My husband does not like coffee at all, so the frosting for his half of the cake was a cream cheese frosting and he loved it, the cake was a bit heavier & I am guessing from the wheat flour but was still "YUMMY"!"

"Absolutely delicious! Moist & flavorful, & easy to make! I didn't make the frosting because I'm diabetic & all my kids have grown up with cakes without frosting (except for special occasions) & think they're too sweet with the frosting. "I made this for our annual neighborhood Labor Day party and everyone wanted to know who made the banana dessert. Instead of mashing the bananas, I put both the sour cream and bananas in my blender to have a smooth batter. I also added a cup of blueberries to the batter that gave the dessert a little more juiciness and tartness. I only used the frosting on half the cake for those who preferred without any extra sweetness. It is definitely more cake-like than bread. It is a keeper for sure."

"Only two of the four in my family like bananas but the two of use that do like this cake. The sour cream makes it super moist. I used a vanilla bean cream cheese frosting for this because the two of use don't care for coffee. The banana flavor is a nice change to the typical white cakes at potlucks."

"For DEFILYER I would suggest several things to try, in order ,1) be sure your oven actually is at 350 F ,2) be sure you are using really ripe bananas, and ,3) since you made it once and it was too heavy: beat the eggs until quite foamy then add them to the thoroughly whipped butter and sugar, this incorporates more air which makes a cake lighter. It is also possible your baking soda is old (I don't know the scientific reason but if the box is open for a while it looses strength - maybe oxidation) so open a new box and try that. Finally, since you know how the batter looked and felt last time add a LITTLE milk if the batter seems to be as thick and/or heavy as last time. Hope these hints help. Delicious recipe and great use for bananas too old for fresh eating pleasure"

"I've had this recipe for about 20yrs. A neighbor gave it to me & have been making it ever since. I changed mine a little. Only used 3/4 c sugar, used non-fat banana yogurt & baked in a 15X11" pan . "I settled on this recipe after looking at several of the others, and I am not disappointed. I liked that it had just one cup of sugar, so the cake is not overly sweet, and I like the addition of sour cream for the moistness. I used light sour cream. I did not make the frosting--I don't think my crew would have liked the coffee flavor--so I just used store bought cream cheese frosting and added some yellow food coloring, which my 6-year-old and 4-year-old (who helped make the cake) thought was great. "Excellent recipe - I subbed applesauce for the sour cream, reduced the sugar, increased the vanilla and used vanilla sugar. I baked in muffin tins at the recipe recommended temperature and they were perfect. Came out moist and delicious for breakfast and snacks."

"Suggestion for a lighter but really yummy frosting: Thaw an 8 oz. carton of Cool Whip per package directions. In a mixing bowl, whisk together a package of instant pudding mix (vanilla or choc.) and ONE cup of milk. Fold Cool Whip into pudding, combining thoroughly. Spread on cooled cake and ENJOY!"

"Simple,easy comfort food. I was going to jazz it up with toasted nuts or some almond flavoring but at the last minute decided to go plane Jane for the group I was feeding and it was the right choice. I subbed some dark brown sugar for a portion and used vanilla sugar for the rest.
