Fluffy Pancakes Recipe

I FOUND this recipe among our old family favorites and adapted it to make a small amount. It's quick and easy to prepare, but we still consider it a special treat. I make it for breakfast and to satisfy a sweet tooth. Topped with a fresh fruit sauce, it's a wonderful dessert! -Eugene Presley, Council, Virginia
TOTAL TIME: Prep/Total Time: 15 min. YIELD:4 servings

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 3/4 cup milk
  • 1/4 cup butter, melted

Directions

  • 1. In a small bowl, combine flour, sugar, baking powder and salt. Combine egg, milk and butter; stir into dry ingredients just until moistened.
  • 2. Pour batter by 1/4 cupfuls onto a greased hot griddle. Turn when bubbles form on top of pancakes; cook until the second side is golden brown. Yield: 8 pancakes.

"These are fabulous! Taste like box mix, but so much better! The batter is super thick so I always add a splash more milk to thin just a bit. Still stays nice and fluffy. I love that this recipe doesn't use buttermilk like most pancake recipes because I don't always have it on hand."

"I think this is the recipe I used the other day. I used 3/4 c. of flour and substituted 1/4 c. of Quinoa flour for the remainder of the flour.

They came out delicious and left me full of energy and a lasting feeling of fullness.

"These pancakes truly were light, fluffy, and delicious. I added about 1/2 tsp of cinnamon to the dry ingredients and 1 tsp vanilla to the wet ingredients. My family loves vanilla flavored pancakes. I also dropped fresh blueberries onto each pancake while the first side was cooking. I had a bit of trouble combining the melted shortening with the milk and egg. Ultimately, I heated the milk and shortening together in the microwave for about 30 seconds and then whisked them together vigorously while adding the egg. Not sure if that's the best technique, but I was pleased with the product."

"This recipe looked simple and easy few ingredients and I thought, great, versitile too. I tried whole wheat flour instead of the white flour but it made the dough more firm like muffin batter. "These are the BEST pancakes! I use 2 Tablespoons of oil instead of the melted shortening, and use buttermilk instead of regular. The buttermilk will make the batter VERY thick, and you will need to quickly spread it out on the griddle, but makes all the difference. You can increase the buttermilk to 1 C. to make the batter more pourable and the pancakes will still come out light and fluffy. I have also doubled the recipe with equally good results."
