Easy Salsa Sloppy Joes Recipe

I created these sandwiches when I realized I did not have a can of sloppy joe sauce. The sweet brown sugar in this recipe complements the tangy salsa. —Mrs. Krista E Collins, Concord, North Carolina
TOTAL TIME: Prep/Total Time: 20 min. YIELD:8 servings

Ingredients

  • 1 pound ground beef
  • 1-1/3 cups salsa
  • 1 can (10-3/4 ounces) condensed tomato soup, undiluted
  • 1 tablespoon brown sugar
  • 8 hamburger buns, split

Directions

  • 1. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in salsa, soup and brown sugar. Cover and simmer 10 minutes or until heated through. Serve on buns.
    Freeze option: Cool and place in a freezer container; freeze up to 3 months. To use, thaw beef mixture in refrigerator; place in a saucepan and heat through. Serve on buns. Yield: 8 servings.

"I am hosting a baby shower next week and was looking for a quick and easy (but tasty joe); we tried a double batch of this last night for dinner; treated our carpet installers to a trial run ... they loved it! This multiplies perfectly! 8 lbs ground beef, 8 cans tomato soup, 4 jars (24 oz. chunky salsa), and 1/2 cup brown sugar will make 64 sandwiches on hamburger buns. Thank you Krista! "The flavor was good, but not as good as I had expected. Our family thought too much of the tomato soup flavor came through. We added a small amount of taco seasoning mix and a little cayenne to "doctor" it up. Next time I will follow one of the suggestions mentioned and maybe add some onions, red pepper and black beans, etc."

"This is great!! I did change a little by adding chopped onions & chopped yellow/red peppers.(Because I add them to everything that I can get by with) Then to add some more fiber & nutrition & stretch the mix a bit further I added a can of rinsed black beans, as my favorite purchased salsa contains them, I decided that a little more would be even better. I know that is a few revsions but the basic is so good & the flavor is still intact but the recipe goes a bit further. Yummy! Will make this again. Thank you for the idea of salsa instead of purchased sloppy joe sauce. Wonderful idea. I will make them using salsa from now on."

"Wonderful, wonderful, wonderful!!! The kids want me to make this now instead of regular sloppy joes! I omitted the brown sugar....hubby doesn't care for the extra sweet taste. The sauce was a little juicy so I sprinkled a small amount of instant potaoes in it to thicken it...perfecto!!! :)"
