Bean Burritos Recipe

My husband and I have two sons, ages 5 and 3. With our demanding careers, main dishes like this one that can be prepared in a flash are essential for us. I always have the ingredients for this recipe on hand. Cooking the rice and shredding the cheese the night before save precious minutes at dinnertime. —Beth Osborne Skinner Bristol, Tennessee
TOTAL TIME: Prep/Total Time: 30 min. YIELD:12 servings

Ingredients

  • 1 can (16 ounces) refried beans
  • 1 cup salsa
  • 1 cup cooked long grain rice
  • 2 cups (8 ounces) shredded cheddar cheese, divided
  • 12 flour tortillas (6 to 7 inches)

Directions

  • 1. In a bowl, combine the beans, salsa, rice and 1 cup cheese. Spoon about 1/3 cup off-center on each tortilla. Fold the sides and ends over filling and roll up.
  • 2. Arrange burritos in a greased 13-in. x 9-in. baking dish. Sprinkle with the remaining cheese. Cover and bake at 375° for 20-25 minutes or until heated through. Yield: 1 dozen.

"Really delicious and couldn't be simpler. I added half a chopped fresh onion for crunch; and, I used Old El Paso Fiesta Rice because it caught my eye in the store when I was picking up tortillas. Took about 10 minutes to put it all together, didn't bother measuring the cheese or salsa, just eyeballed it. Baked without the cheese topping on 350 for 15 minutes, added some cheese and baked for about 6 more minutes. Served with sliced avocado and sour cream. This is going in regular rotation in my house."

"I have a 6 year old and a husband who rarely like vegitarian meals but this is somethig we all dive into for dinner and the next day for lunch! Plus is is so economical and easy to do. "I was impressed by how quick and easy this recipe was to make. My husband really enjoyed these and was surprised that there was no meat in them. I am not a huge fan of using salsa as such a filler -- I might be interested in trying fresh tomatoes and spices at another time. But for something quick and relatively good for you, this one is a winner."

"This is a very simple, budget friendly meal that you can adjust to your familys' tastes. I sometimes add ground beef or left over pot roast to the filling along with mexicorn and other times I make it with only the ingredients listed. This recipe is a keeper for me and my family!"

"These went over extremely well chez Aquarelle tonight, so well that my husband and my daughter argued over who gets the two leftover burritos. Excellent meatless fare, not too spicy, but easily doctored up if you prefer spicy.

I used good-quality jarred salsa (we like Mrs. Renfro's Black Bean Salsa) but these would be fun to try with various homemade salsas. And you don't have to make all twelve burritos at once. The filling will keep, covered and refrigerated, for a few days. I think the burritos could also be made in advance, wrapped separately, and frozen. Will definitely be making these again."
