Zucchini Fries for 2 Recipe

I often make these fries for my husband and myself, especially when our garden is full of zucchini. The cornmeal coating gives them a nice crunch. —Sarah Gottschalk, Richmond, Indiana
TOTAL TIME: Prep/Total Time: 30 min. YIELD:2 servings


  • 2 small zucchini
  • 1 large egg white
  • 1/4 cup all-purpose flour
  • 3 tablespoons cornmeal
  • 1/2 teaspoon each salt, garlic powder, chili powder, paprika and pepper
  • Cooking spray
  • Marinara or spaghetti sauce, warmed


  • 1. Cut zucchini into 3x1/2x1/2-in. pieces. In a shallow bowl, whisk egg white. In another shallow bowl, combine the flour, cornmeal and seasonings. Dip zucchini in egg white, then roll in flour mixture.
  • 2. Place zucchini on a baking sheet coated with cooking spray; spray with additional cooking spray. Bake at 425° for 18-22 minutes or until golden brown, turning once. Serve with marinara sauce. Yield: 2 servings.

"Made these tonight to go with stuffed peppers and we thought they were delicious! I didn't think they got as brown as I wanted so I sprayed them with a little spray butter and turned the heat to broil for a couple of minutes. Crispy skin and top a great alternative to fried."

"Actually this was a "Zucchini Fries for One" recipe as my hubster doesn't care for the squash. More for me! I liked the seasonings; didn't care for the baking. The second time I fried them and they turned out crisp and wonderful."

"I made these the other night to serve with hamburgers and wanted a change from plain old French fries. We both give them a 5 star rating but I did have to make extra coating mixture to be able to coat all of my zucchini slices. We just ate ours like French fries with ketchup but they were also just as good without it too. Will be making these again. Thanks for the recipe."

"Low carb version: I made these using just Parmesan cheese instead of flour and corneal, and seasoned the Parmesan coating with garlic and pepper. They were good! The bigger the piece the better, in that they stayed firmer. I used small to medium sized zucchini's, cut it in 2 (in the middle, not lengthwise) then quartered each half. Sprinkled them with lemon juice before eating with ranch dressing."
