Ingredients

  • 3/4 pound sliced bacon, diced
  • 1 medium onion, chopped
  • 8 to 10 potatoes, peeled and cut into chunks
  • 1 medium carrot, grated
  • 5 cups water
  • 1 can (12 ounces) evaporated milk
  • 2 tablespoons butter
  • 4-1/2 teaspoons minced fresh parsley
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/8 to 1/4 teaspoon cayenne pepper

Directions

In a large skillet, cook bacon and onion; drain and set aside. In a soup kettle or Dutch oven, cook the potatoes and carrot in water for 20 minutes or until tender (do not drain). Stir in the remaining ingredients and the bacon mixture. Cook for 10 minutes or until heated through. Yield: 14 servings (3-1/2 quarts).

"I made this last weekend out of my Taste of Home Celebrations cookbook. I'm sorry to have to say it failed. After tasting it, nobody would touch it. I tried adding cheese to see if that would help, but with no success, so I ended up throwing out most of the whole, big pot. Now, to be fair I must admit to using turkey bacon, and half fat free and half regular evaporated milk. This is what's on hand due to dietary issues. While I have no doubt this affected the flavor some, I can't believe that's all that contributed as we are used to these things. However, considering how bad it was I would still recommend to anyone considering making it, NOT to substitute with these ingredients. I'm afraid this will not be on the list to try again. :("

"This soup has been a hit in my family, even with the ones that don't care for potatoe soup. I altered a few ingredients by adding more of the spices and adding sour cream. Everyone always looks forward to me making it."
