Western Beans Recipe
- 4 bacon strips, diced
- 1 large onion, chopped
- 1-1/3 cups water
- 1/3 cup dry lentils
- 2 tablespoons ketchup
- 1 teaspoon garlic powder
- 3/4 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon dried red pepper flakes
- 1 bay leaf
- 1 can (16 ounces) whole tomatoes with liquid, chopped
- 1 can (15 ounces) pinto beans, drained
- 1 can (16 ounces) kidney beans, drained
- 1. Lightly fry bacon in a heavy 3-qt. saucepan. Add onion; cook until transparent. Stir in remaining ingredients. Cook over medium heat for 45 minutes or until lentils are tender, stirring once or twice. Remove bay leaf before serving. Yield: 8-10 servings.
