Lasagna is a classic for a reason; it's loaded with layers of homey, cheesy, saucy goodness that feeds the whole family—and then some! But every once in a while it's time to give the classic dish a bit of a refresh with creative combinations. That's where this velvety Artichoke Spinach Lasagna comes in. It takes a little from traditional lasagna and a little from artichoke-spinach dip and blends them into one incredible dish.
The recipe comes from Carole Rago of Altoona, Pennsylvania, and it's one of Taste of Home's most highly rated recipes. Fans go crazy for its creaminess, which is due in part to the roasted garlic Parmesan sauce, melty mozzarella and feta cheese. It's vegetarian-friendly, loaded with chopped artichokes, spinach, onions, mushrooms and lots of tasty garlic, but even meat-eaters can get behind its luscious layers. The recipe is a shoe-in for weeknights, but its unique flavors make it feel special enough for a Sunday dinner. And with 12 servings, there's plenty to share—or save and freeze to love later on.
