Warm Grapefruit with Ginger-Sugar Recipe
Hostess Stephanie Levy greets her guests sweetly with broiled grapefruit—a specialty at her Lansing, New York B&B. Try it as an appetizer for breakfast or brunch or as a light, anytime dessert.
- 1 large Ruby grapefruit
- 2 to 3 teaspoons chopped crystallized ginger
- 2 teaspoons sugar
- 1. Preheat broiler. Cut grapefruit crosswise in half. With a small knife, cut around the membrane in the center of each half and discard. Cut around each section to loosen fruit. Place on a baking sheet, cut side up.
- 2. Mix ginger and sugar; sprinkle over fruit. Broil 4 in. from heat until sugar is melted, about 4 minutes. Yield: 2 servings.
1/2 grapefruit: 85 calories, 0 fat (0 saturated fat), 0 cholesterol, 3mg sodium, 22g carbohydrate (18g sugars, 2g fiber), 1g protein. Diabetic Exchanges: 1/2 starch, 1 fruit.
