Walnut Zucchini Saute Recipe

  • 2 medium zucchini, cut into 1/4-inch slices
  • 1/3 cup chopped walnuts
  • 2 teaspoons olive oil
  • 1 teaspoon butter
  • 3 garlic cloves, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper


  • 1. Saute zucchini and walnuts in oil and butter in a large skillet until zucchini is tender. Add the garlic, salt and pepper; cook and stir for 1 minute. Yield: 4 servings.

"Without thinking, I added squash to the recipe, but kept everything else the same besides doubling the recipe. Everyone complimented the dish, even the vegetable-hating kids! I will definitely make this again, although I might sprinkle some fresh Parmesan on top for a little extra taste."
