Walnut Oat Pie

- 3 eggs, lightly beaten
- 1 cup packed brown sugar
- 1/2 cup quick-cooking oats
- 1/2 cup chopped walnuts
- 1/2 cup evaporated milk
- 1/2 cup maple syrup
- 1/4 cup butter, melted
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1 unbaked pie shell (9 inches)
- In a large bowl, combine the first nine ingredients. Pour filling into pie shell. Bake at 350° for 30-35 minutes or until set. Cool on a wire rack.
