Vegetarian Hummus Wraps

I created this recipe to get more veggies into my diet. I'm busy and on the go like many other mothers. This recipe gives me energy and tastes delicious. —Amber Indra, Thousand Oaks, California.

Ingredients

  • 6 tablespoons hummus
  • 2 flour tortillas (8 inches), room temperature
  • 1/2 cup shredded carrots
  • 1 cup fresh baby spinach
  • 6 slices tomato
  • 2 tablespoons green goddess salad dressing

Directions

  • Spread hummus over each tortilla. Layer with carrots, spinach and tomato; drizzle with dressing. Roll up tightly.

    Be sure to check the ingredients in the dressing first, because most green goddess dressings contain anchovies which aren't suitable for vegetarians.

    I was not crazy about it- I thought the hummus and green goddess dressing clashed more than complemented one another; but it was ok. Friends and family seemed to think it was pretty tasty though and it was easy to make for an afternoon with company.
