I found this recipe in a magazine years ago and make it all the time. It has to be one of the most simple, speedy and tasty skillet side dishes ever invented.

- 1 medium sweet red pepper, julienned
- 1 medium zucchini, julienned
- 1 garlic clove, minced
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- In a small skillet, saute the pepper, zucchini and garlic in oil until tender. Stir in salt and pepper. Yield: 2 servings.
