- 4 large eggs, lightly beaten
- 1 cup 2% milk
- 2 tablespoons sugar
- 2 teaspoons vanilla extract
- 1/8 teaspoon salt
- 12 slices day-old sandwich bread
- Optional toppings: butter, maple syrup, fresh berries and confectioners' sugar
- In a shallow dish, whisk together first five ingredients. Preheat a greased griddle over medium heat.
- Dip bread in egg mixture, allowing to soak 30 seconds on each side. Cook on griddle until golden brown on both sides. Serve with toppings as desired. Yield: 6 servings.

"Simple and easily adaptable to a larger family. I used vanilla almond milk in lieu of regular milk in order to get a more vanilla flavor. I also used a chocolate chip bread for fun and my kids loved it. Each ate at least 2 slices and my 2 year old labelled it Super Awesome and cleaned his plate. "I've been using vanilla extract for years, but try maple along with the vanilla extract. I did this when my daughter was small and we had to leave early, she could have her french toast in the car with no mess. I made bunches and just froze them, worked well just dropping them into the toaster. Also, I've been using Madagascar Bourbon Pure Vanilla Bean Paste recently and it is an improvement over the extract. Enjoy!"
