Ingredients
- 1-1/2 pounds ground sirloin
- 1 envelope taco seasoning
- 2/3 to 1 cup water
- 1 cup shredded Oaxaca cheese
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1 can (10 ounces) red enchilada sauce
- 1/4 cup pickled jalapeno slices
- 1/2 cup chopped red onion
- 1/2 cup chopped green onions
- 1/2 cup pico de gallo
- 1/2 cup guacamole
- 1/2 cup sour cream
Directions
- Preheat oven to 400°. In a large skillet, cook and crumble beef over medium heat until no longer pink, 4-6 minutes. Drain the beef. Add water and taco seasoning; cook until thickened. Cool slightly.
- Transfer to a large bowl. Add 1/4 cup Oaxaca cheese, 1/4 cup cheddar, cream cheese and 1/4 of the enchilada sauce. Stir until well combined. Spread evenly into a cast iron skillet or large baking dish. Place pickled jalapenos over cheese.
- Top with remaining enchilada sauce. Sprinkle with remaining shredded cheeses. Bake until bubbly and browned, 8-10 minutes.
- Garnish as desired with red onions, green onions, pico de gallo, guacamole and sour cream. Serve warm.
