Turkey Meat Loaf Recipe
- 1 cup quick-cooking oats
- 1 medium onion, chopped
- 1/2 cup shredded carrot
- 1/2 cup fat-free milk
- 1/4 cup egg substitute
- 2 tablespoons ketchup
- 1 teaspoon garlic powder
- 1/4 teaspoon pepper
- 2 pounds ground turkey breast
- 1/4 cup ketchup
- 1/4 cup quick-cooking oats
- 1. Preheat oven to 350°. Combine first eight ingredients. Add turkey; mix lightly but thoroughly.
- 2. Transfer to a 9x5-in. loaf pan coated with cooking spray. Mix topping ingredients; spread over loaf. Bake until a thermometer reads 165°, 60-65 minutes. Let stand 10 minutes before slicing. Yield: 10 servings.
1 slice: 195 calories, 8g fat (2g saturated fat), 63mg cholesterol, 188mg sodium, 12g carbohydrate (4g sugars, 1g fiber), 20g protein. Diabetic Exchanges: 3 lean meat, 1 starch.
