Tomatoes Supreme Salad
After I retired, I persuaded my wife to let me do most of the food preparation. This refreshing salad is simple to put together, but the results are fantastic.—Wendell Obermeier, Charles City, Iowa
Total TimePrep: 10 min. + chilling
- 8 thick tomato slices
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons sugar
- 8 thin sweet onion slices
- 1/2 cup vinegar
- 8 green pepper rings
- Chopped fresh parsley
- Place tomato slices on paper towel to drain excess moisture; place on serving plate. Combine salt, pepper and sugar; lightly sprinkle half over tomatoes. Top each tomato with an onion slice. Sprinkle 1 tablespoon of vinegar over each onion. Sprinkle remaining salt mixture over onions. Cover and refrigerate at least 30 minutes before serving. Garnish with green pepper rings and parsley.
