Tomato Cucumber Salad with Mozzarella

- 5 plum tomatoes, chopped
- 1 medium cucumber, coarsely chopped
- 8 ounces cubed part-skim mozzarella cheese
- 1 cup red or white wine vinaigrette
- In a large resealable plastic bag, combine the tomatoes, cucumber and cheese. Add dressing; seal bag and turn to coat. Refrigerate for at least 15 minutes. Serve with a slotted spoon.

Wow was this good. I used a red wine vinaigrette dressing from Wegman's and added some red onion, salt and pepper. It was so easy and super delicious. I will make this all summer and for parties.

Our entire family loves this salad! Instead of the vinaigrette, I use Italian dressing. It adds a bit more flavor, and we love it!
