Sweet Potato Bread & Pineapple Butter

Makes1 loaf (16 slices) and 1 cup butter
This recipe is amazing! The first time, I made it with sweet potatoes and it was excellent. Nice and moist and flavorful. The second time, I made it with pumpkin and used Chinese 5 Spice instead of cinnamon. Again, a 5 star winner. The third time, I substituted mashed bananas and omitted the cinnamon, but added 1 tsp vanilla. Winner, Winner, Chicken Dinner! The versatility has me anxious to try more options - applesauce, cranberry sauce (whole or gel), baby food carrots. The opportunities are limitless. Thank you for this awesome recipe!
Delicious and very moist. My family loved it. Instead of the pineapple butter, I mixed 8 oz. 1/3 less fat cream cheese (softened) and the can of pineapple drained. If mixture is too thick, just add a few drops of that pineapple juice to make it spreadable. Yummy!!!!!!!
Very, very good! Hubby is my critic on all new recipes. Says this is a keeper. Instead of 1/3 cup of water I used orange juice. Baking time was 1 hour 10 minutes in my oven. Very moist.
definitely a five star recipe. my family loved this. my dad actually made the comment that he'll "never eat banana bread again!" It was delicious! I think the pineapple butter would be great with other things, too.
Excellent bread! As another reviewer suggested I reduced the sugar to one cup. I substituted 1/4 teaspoon cloves and 1/4 teaspoon allspice for the nutmeg and added about a cup of walnuts. I didn't make the pineapple butter ... the bread is yummy, moist and sweet all on its own. I bake a lot of quick breads and this one will definitely be placed in the tried and true file!
Sounds real good. But I'm not a fan of the butter. What would the nutritionals be without it?You can't post a question without rating the recipe? I feel bad rating it since I haven't tried it, but that looks like the only way I can get my question posted
Couldn't stop picking off the delicious crusty pieces on top! I would recommend mixing a tablespoon of pineapple butter first to see if you'll like it. I found it to be overpowering, and the bread was too good to cover up the flavor.
This has become a year round favorite! Wonderful flavor and the pineapple butter makes it a special occasion!
This bread was very moist! I did make a couple of changes. I only used 1 cup of sugar and added some extra sweet potato that I had left over (1/2 cup more). I took this bread to a gathering and couldn't even sit down before I was asked about the recipe. It was gone pretty fast for someone coming late to the gathering. Have already made this 3 other times. It's a winner.
