I created these easy muffins after I'd stocked up on too much candy and banana bread mix. My family loves the peanut-butter surprise, and these muffins were a huge hit at a church potluck. —Teresa Heavilin, Kokomo, Indiana

Ingredients

  • 1 package (14 ounces) banana quick bread and muffin mix
  • 1 cup milk
  • 1/2 cup canola oil
  • 2 large eggs
  • 12 miniature peanut butter cups

Directions

  1. Prepare banana bread batter according to package directions, using milk, oil and eggs. Fill greased muffin cups two-thirds full. Place a peanut butter cup in the center of each; spoon remaining batter over top.
  2. Bake at 400° for 15-20 minutes or until a toothpick inserted into muffin comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

Can you freeze Surprise Banana Muffins?

Freeze cooled muffins in resealable plastic freezer bags. To use, thaw at room temperature or, if desired, microwave each muffin on high for 20-30 seconds or until heated through.
