Super Spinach Salad

Ingredients

  • 1 package (9 ounces) fresh baby spinach
  • 1/2 pound sliced fresh mushrooms
  • 2 hard-boiled large eggs, chopped
  • 2 tablespoons bacon bits
  • 1/2 cup balsamic vinaigrette

Directions

  • 1. In a large salad bowl, combine the spinach, mushrooms, eggs and bacon. Drizzle with vinaigrette; toss to coat.

1 cup: 68 calories, 4g fat (1g saturated fat), 54mg cholesterol, 225mg sodium, 4g carbohydrate (2g sugars, 1g fiber), 4g protein. Diabetic Exchanges: 1 vegetable, 1 fat.

    My husband and I love this salad!! We both love spinach, so what's not to love?

    Made this recipe as is and it was a huge hit. Will make it again and substitute crisp fried pancetta for the bacon and add toasted pecans. Topped with grilled smoked duck breast it will be a killer. Excellent!

    Tried this today and it was delicious, very simple to make but looks good. I added a few chopped walnuts and it was great.

    I have been making this recipe for a few years now. The only difference I use is the raspberry vinaigrette and also use craisins in mine. Very good salad!!

    I made this salad when I received my magazine. My husband I and I loved it!! the amazing thing is, my kids even liked it. It's easy and delicious!
