Ingredients

  • 2 cups self-rising flour
  • 2 cups sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 3/4 cup vegetable oil
  • 2 jars (6 ounces each) strained plum baby food
  • 3 eggs, beaten
  • 1 cup chopped pecans
  • GLAZE:
  • 1 cup plus 2 tablespoons confectioners' sugar
  • 1 jar (4 ounces) strained plum-apple baby food
  • 2 tablespoons milk

Directions

In a large bowl, combine flour, sugar, cinnamon and cloves. Stir in oil, baby food and eggs. Fold in pecans. Pour into a greased and floured 10-in. tube pan. Bake at 350° for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. In a small bowl, combine glaze ingredients until smooth. Drizzle over top and sides of cake. Yield: 16-20 servings.
