Ingredients

  • 1/4 cup orange juice
  • 1 tablespoon reduced-sodium soy sauce
  • 1/2 teaspoon cornstarch
  • 1/2 teaspoon Dijon mustard
  • 2 tablespoons orange marmalade
  • 2 boneless skinless chicken breast halves (6 ounces each)
  • 1/4 teaspoon garlic salt
  • 1 tablespoon olive oil

Directions

  1. For glaze, whisk together first 4 ingredients in a microwave-safe bowl; stir in marmalade. Microwave, covered, on high until thickened, 2-1/2 to 3 minutes, stirring occasionally.
  2. Pound chicken breasts to 1/2-in. thickness; sprinkle with garlic salt. In a large skillet, heat oil over medium heat; cook chicken until a thermometer reads 165°, 5-6 minutes per side. Top with glaze.

  • Flattening the chicken before it cooks helps it cook quickly and evenly.
  • When flattening the chicken, cover the meat with plastic wrap and use the flat side of a meat mallet. If you don’t have a meat mallet, use a rolling pin.
  • You don’t have to go crazy with stirring the sauce while it cooks in the microwave. We stirred it twice and got a nice, thick glaze.
