Spinach Salad Dressing

This special dressing works on any salad and has just the right sweet-and-sour taste to dress up a lunch salad.—Cindy Harnish, Wexford, Pennsylvania

    1-1/3 cups

Ingredients

  • 2/3 cup sugar
  • 1/3 cup cider vinegar
  • 1/3 cup canola oil
  • 1 small onion, finely chopped
  • 4 teaspoons prepared mustard
  • 1 teaspoon salt
  • 1/2 teaspoon coarsely ground pepper
  • Fresh spinach leaves

Directions

  • Combine the first seven ingredients in a blender or food processor; cover and process until smooth. Serve over fresh spinach. Store leftover dressing in the refrigerator.

2 tablespoons: 118 calories, 7g fat (1g saturated fat), 0 cholesterol, 260mg sodium, 14g carbohydrate (0 sugars, 1g fiber), 1g protein.

    Upon the recommendations of others, I halved the sugar, and so glad I did! After cutting the sugar, I felt the dressing still too sweet so added some more vinegar and oil. With this reduction of sweetness, it's much more to our liking!

    I only used half the sugar and it was still too sweet. I like my spinach salad dressing more tangy and less sweet.

    This recipe is excellant, we usually use a store bought salad dressing, but is hard to find, there is only one brand that I know of and only one store that carries it.I found this recipe on your site and tried it is fantastic and easy to make!

    I love this dressing! I used it with a spinach mix but more often have used it to marinate chopped veggies: cauliflower , broccoli , peppers, celery, carrots and lots of cilantro.

    Loved this dressing recipe! Very easy. I was out of canola oil so used EVO oil - worked fine. We served bacon bits over top the dressing - very yummy! Thanks for sharing!
