- 2 tablespoons olive oil
- 1/2 cup chopped onion
- 3/4 cup water
- 1 tablespoon dried parsley flakes
- 1/4 to 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup uncooked instant rice
- 2 cups fresh baby spinach
- 1. In a saucepan, heat oil over medium-high heat; saute onion until tender. Stir in water, parsley, salt and pepper; bring to a boil. Stir in rice; top with spinach.
- 2. Cover; remove from heat. Let stand until rice is tender, 7-10 minutes. Stir to combine.

Jul 14, 2019I really appreciated this recipe I needed something tasty and cheap. I sautéed the onions and then used regular white rice I just added the water to the onions with parsley and cooked the rice. I also used fronzen spinach and servers it immediately. I also like to add my own seasonings and next time I will experiment with adding mushrooms or cheese
Jun 17, 2018I prepared this dish tonight. I used instant brown rice but it took much longer to cook. Next time I will use instant white rice or cooked brown rice. I will decrease the oil, too, and add a little more spice. I used baby spinach and it was delicious. We both cleaned our plates. This is quick and easy to prepare.

This recipe was very tasty and quick. I would make it again using less water and more spices. Maybe add some mushrooms and garlic.
Dec 31, 1969This is a good side dish. Gets people to eat spinach even tho they wouldn't eat it plain. Could use a little more seasoning - whatever kind you like. Maybe onion powder. I boiled it a few minutes after I added rice.
