Spinach & Feta Saute Recipe
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 1 package (6 ounces) fresh baby spinach
- 1/4 cup slivered almonds
- 1/2 cup crumbled feta cheese
- 1. In a large skillet, saute garlic in oil for 1 minute. Add spinach and almonds; saute 2 minutes longer or just until spinach is wilted. Sprinkle with cheese. Yield: 2 servings.
1/2 cup: 291 calories, 25g fat (5g saturated fat), 15mg cholesterol, 338mg sodium, 8g carbohydrate (1g sugars, 5g fiber), 10g protein.

"I made a triple batch of this with my sister-in-law. She does not cook at all, but had no trouble with this recipe. It was awesome. Between the two of us, we ate almost the entire triple batch for dinner. I'm going to try adding some Greek seasoned hockey with it or putting it over eggs and English muffin for a pseudo eggs Benedict."
