A classic Southern comfort food, this spread is used as an appetizer with crackers, corn chips or celery. It is also smeared between two slices of white bread for sandwiches and as a topping for hamburgers and hot dogs. —Eileen Balmer, South Bend, Indiana

Ingredients

  • 1-1/2 cups shredded cheddar cheese
  • 1 jar (4 ounces) diced pimientos, drained and finely chopped
  • 1/3 cup mayonnaise
  • Assorted crackers

Directions

Combine cheese, pimientos and mayonnaise. Refrigerate for at least 1 hour. Serve with crackers. Yield: 1-1/4 cups.

"I made this for our annual family Easter party with the following changes. I added 2 ounces of cream cheese, I used sharp Cheddar cheese and about 3/4 cup of cheddar Jack cheese, I put in 2 ounces of pimiento instead of 4 and added seasoned salt to taste. I served it with lavish bread style crackers.

It was so good people asked for the recipe and I will be making this again."
