Smooth Carrot Soup
Total TimePrep/Total Time: 30 min.
- 2 cups chopped carrots
- 1/4 cup chopped onion
- 1 tablespoon butter
- 1 can (14-1/2 ounces) chicken broth
- 1/4 teaspoon ground ginger
- 1/2 cup buttermilk
- In a small saucepan, saute carrots and onion in butter until crisp-tender. Add broth and ginger. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until carrots are very tender. Cool slightly.
- Puree soup in a blender; return to the pan. Stir in buttermilk; heat through (do not boil).
Nutrition Facts3/4 cup: 100 calories, 5g fat (3g saturated fat), 15mg cholesterol, 721mg sodium, 12g carbohydrate (7g sugars, 3g fiber), 3g protein.

I would say a 4* rating as I felt that the soup could've used more seasoning. The only change I did was pureeing both the buttermilk and carrot mixture in my blender. I WILL say that I did enjoy the soup and I ate the whole amount after I pureed the soup! NOTE: One VFE made this soup and found that the soup was seasoned to her tastes! delowenstein

Really love the ease of ingredients and putting it all together, best part though is how delicious this is. Have made this numerous times now and it will always be my go-to carrot soup recipe. Really so inexpensive too make also, always love a deal. Thank-you Robyn!

Awesome! My family loved it (7yr old son, 11yr old daughter, hubby and I). Took some to work for everyone to try and they all gave it 5 stars! My hubby is a big hunter and he said he would love to have this in his thermos on his all day hunts! Thanks Robyn for the great recipe!

Well balanced combination of flavors that highlights carrots without overwhelming the taste buds. It pairs nicely with a light dinner, or stands alone for lunch - and so easy to make. This will certainly be a repeat recipe in our house.

Wonderful! My young children liked it as well as my husband (who generally isn't much of a soup person). Will definitely make again.

Super-sipmle to make and DELICIOUS! Perfect portion sizes for two, but also reheats very well!
