Smoky Chicken Spread
Total TimePrep: 15 min. + chilling
Makes32 servings (2 tablespoons each)
- 3/4 cup mayonnaise
- 1/4 cup finely chopped onion
- 1 tablespoon honey
- 1/2 teaspoon seasoned salt
- 1/8 teaspoon pepper
- 3 cups finely chopped cooked chicken
- 1/2 cup finely chopped celery
- 1/2 cup coarsely chopped smoked almonds
- Assorted crackers
- In a large bowl, mix first five ingredients. Stir in chicken, celery and almonds. Refrigerate, covered, at least 2 hours.
- Serve with crackers.

Big hit! I added a bit more seasoned salt to give it a little more bite. Several people asked me for the recipe the first I made this!

This was great! I added a few drops of liquid smoke (my store brand smoked almonds weren't smokey enough).

Walgreens and CVS both carry Blue Diamond smoked almonds but I make a spread that uses cream cheese, liquid smoke and walnuts that is very similar and is even good without nuts good on crackers and an be made with chicken, tuna or salmon an going to try smoked almond with these

I doubt seriously that I will find smoked almonds where I live (I will check the health food stores), but I'm wondering if I could maybe soak almonds in Liquid Smoke and get the effect. Has anyone tried this? I'm thinking this is an outstanding recipe, I love chicken salad.

Let me start with I am not a chicken salad fan. However I went bed thinking about when I can have more of this and planned all the way into work when I can have my sandwich. It is that good. I had it on the small Hawaiian roll and it doesn't get better than that. Made exactly as instructions said, only thing I might do different is I bought the Walmart brand smoked almonds to save a little as these are expensive! Next time I will spring for a brand name, I think the smoky flavor would be better.

OOOOOH YES! This spread is every bit as good as the previous reviewers say! Definitely one of the 3 best chicken salad recipes I've ever tasted, if not THE best. I made it for an office Christmas party and everyone loved it. I'm also going to use it as a sandwich filling, and in a tomato rose or lettuce wrap as a straight salad (I WAS going to do that the next day, but my son scarfed it up before I could). No doubt the smoked almonds make the difference, so make the effort to get them. I found them in a specialty store for herbs/spices + nuts, but a gourmet store would probably have them too. However, it would probably still be very good even with plain almonds.

This recipe is fabulous -- totally delicious -- even my kids liked it! Makes an awesome appetiser and everyone asks for the recipe.

This was absolutely the BEST chicken salad I have ever had the pleasure of eating! I know this is supposed to be an appetizer but this is going into the lunch rotation as it made a fine sandwich on a hearty bread. Definitely a keeper!

VERY good! I don't give many recipes 5 stars, but this one made the cut. Made exactly as written.
