Slow-Cooked Potatoes with Spring Onions

- 4 pounds small red potatoes
- 8 green onions, chopped (about 1 cup)
- 1 cup chopped sweet onion
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- In a 5- or 6-qt. slow cooker, combine all ingredients. Cook, covered, on low until potatoes are tender, 6-8 hours.

This is one of the easiest and most delicious ways to prepare potatoes. Everyone gave them rave reviews. They're just as good the next day if you reheat them in the oven wrapped in foil. I cooked them for 2 hours on high and 2 hours on low because of a time crunch. I'm going to make them again this weekend and cook per the recipe. All I know is that if you love potatoes, you'll love this recipe.
