Simple Spanish Rice for 2

Ingredients

  • 1/2 cup chopped green pepper
  • 1 medium tomato, peeled, seeded and diced
  • 1/4 cup finely chopped onion
  • 1 tablespoon vegetable oil
  • 1/2 cup uncooked long grain rice
  • 1 cup chicken broth
  • 1/2 teaspoon salt, optional
  • 1/4 teaspoon pepper

Directions

  • 1. In a saucepan, saute green pepper, tomato and onion in oil until tender. Add rice; cook and stir for 2 minutes. Stir in broth, salt if desired and pepper; bring to a boil. Reduce heat; cover and simmer 25 minutes or until rice is tender.
