Sausage ‘n’ Apple Baked Squash
- 1/2 cup chopped apple
- 1/4 cup chopped onion
- 2 tablespoons dry bread crumbs
- 1/4 teaspoon ground sage
- 1/8 teaspoon pepper
- 1/2 pound bulk pork sausage
- 2 small acorn squash, halved and seeded
- 1. In a medium bowl, combine apple, onion, bread crumbs, sage and pepper. Add sausage; mix well. Spoon into squash halves; place in a greased 13-in. x 9-in. baking dish. Cover and bake at 375° for 45 minutes. Uncover and bake 10 minutes more or until sausage is no longer pink and squash is tender.

The sausage/apple mixture is really good. I found that the acorn squash needs to cook longer than 45 minutes before removing the cover. I will try cooking for an hour or maybe an hour and 20 minutes before uncovering next time. I also put a little salt, pepper, and butter in the hollow of the squash before adding the sausage mixture. I will be making this again!
