Saucy Italian Orzo Recipe

Orzo is a fun twist in this hearty, saucy Italian dish. Spinach not only provides color and flavor, but also gives this meal a healthy kick. Taste of Home Test Kitchen

  • 1 pound ground beef
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 cans (14-1/2 ounces each) diced tomatoes with basil, oregano and garlic
  • 1 can (14-1/2 ounces) beef broth
  • 1 can (6 ounces) tomato paste
  • 3/4 cup uncooked orzo pasta
  • 1 teaspoon Italian seasoning
  • 2 cups fresh baby spinach


  • 1. In a Dutch oven, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain.
  • 2. Stir in the tomatoes, broth, tomato paste, orzo and Italian seasoning. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until orzo is tender. Add spinach; cook and stir until spinach is wilted. Yield: 6 servings.

"I used whole wheat orzo and 93/7 lean meat. I also used 1 can of spicy diced tomatoes and one can of stewed tomatoes. Instead of Italian seasoning I used penzey spice's pasta sprinkle. My husband really enjoyed this dish. I might stuff peppers with this filling next time."

"This was really tasty! I did need to double the Italian seasoning, and added a good amount of kosher salt and black pepper. My family was not a fan of the spinach and everyone ate around the pieces! My husband suggested to make it again but without the spinach and to use it for lettuce wraps! It was so delicious and I think if we use the meat mixture that way it will be perfect!"

"This is my new favorite can't miss recipe. It is so comforting and everyone just loves it. It doubles and even tripes easily, enabling you to feed a big crowd with one pot. I love the addition of spinach for vitamins and fiber and I, also, added more than was called for (about twice as much). I used half of the canned tomatoes called for and used canned fire roasted tomatoes for the other half, which lent a deep sweetness to the dish. I also went much lighter on the tomato paste, using two tablespoons instead of the whole can. This one is a treasure!"

"We found this to be a nice dish but a little on the bland side. Next time, some red pepper flakes will find their way into the pan. Or even better, some Italian sausage. (Of course, that adds fat, but it would be tasty!)"
