S'more Bars Recipe

Once school starts, it can be hard for kids to let go of summer. But these rich, gooey, great-tasting bars will bring back sweet campfire memories—and smiles—whether they're served for dessert or as an after-school snack. —Lisa DiPrima, Wilton, New Hampshire
TOTAL TIME: Prep: 20 min. Bake: 25 min. + cooling YIELD:18 servings


  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1-1/3 cups all-purpose flour
  • 3/4 cup graham cracker crumbs
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 5 milk chocolate candy bars (1.55 ounces each)
  • 1 cup marshmallow creme


  • 1. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, cracker crumbs, baking powder and salt; gradually add to creamed mixture. Set aside 1/2 cup for topping.
  • 2. Press remaining mixture into a greased 9-in. square baking pan. Place candy bars over crust; spread with marshmallow creme. Crumble remaining graham cracker mixture over top.
  • 3. Bake at 350° for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into bars. Store in an airtight container. Yield: 1-1/2 dozen.

"I followed the recipe exactly as written and they did not come out well. The crumb topping was too loose, did not stick to the marshmellow and the flour was all you coukd taste. It was terrible. I made these for a picnic and i ended up throwing them away. I'm an avid baker and have made many bar recipes and these are just awful."

"I thought these bars were really good! They were fairly easy to put together, the hardest part was putting the dough into the pan without it sticking all over your hands. Using chocolate bars made assembly easier, the fluff was obviously sticky but when they were cut into bars, it wasn't as messy as I thought they would be. I plan on making these again."

"These turned out delicious. I didn't have milk chocolate candy bars but I did have a package of Dove milk chocolate Promises. I opened them up and laid them side by side to cover the pressed crust layer. These bars are very simple to throw together. They taste like s'mores but aren't as messy to eat."

"I just made this recipe and incorporated many suggestions..... One key to melt the marshmallow creme to make prep easier- was great!! Will always do in future use of recipes using marshmallow creme; truly an awesome tip!! Also used more graham cracker crumbs and much less flour and made a thinner crust. Then after laying crust sprinkled with additional graham cracker crumbs and also a sprinkling at the end. Great recipe, a s'more in a simple bar! Taste is delicious!!"

"I reversed the amounts of graham cracker crumbs and flour, and I used brown sugar and dark chocolate bars. I used a slightly larger pan to make the base a little thinner. I did a little test section of cut marshmallows, but we didn't really like them; the marshmallow cream made a better bar. Yum!"

"These were very tasty. As other reviews commented, though, they taste more like a cookie bar. Perhaps changing the name to s'mores cookie bars would be helpful. I feel it would more accurately reflect the rich, doughy texture of the crust. With that said, my kids absolutely loved these. Although they were different from what I expected, they were still delicious."

"Oh wow! Super sweet! Next time I make these snacks I think I'll try half the sugar with all the chocolate & marshmallow I don't think it needs the added sugar to the cookie crust? I don't think it taste like a s'mores but if your craving something super sweet "then this is it!" My husband said its a good snack and a small piece goes a long way. "I've previously rated this recipe but I wanted to comment about a variation I tried today. I made these into cookies using a small cookie scoop, a large marshmallow cut in half, and 2 squares of a Hershey's bar per cookie. I baked the cookie for 8-10 minutes at 375 degrees, added the marshmallow to the top of the cookie for 2 minutes then broiled it to brown it a little. I removed them from the oven then gently pressed the chocolate bars on top. I let them cool a little bit but not too long! I liked them as a cookie as much as a bar! My batch made about 2 1/2 dozen cookies."

"We loved these, they tasted rich from the combo of chocolate and marshmallow.

The graham cracker crust didn't seem to have enough graham cracker flavor, I'll consider adding more graham and less flour also a little honey and vanilla to kick it up.
For the chocolate, I'll either buy a more expensive brand or consider melting, cooling and pouring before baking... The traditional chocolate bar from Pennsylvania has a flavor that seems too distinctive and a little overbearing for the recipe."
