- 1 package (8 ounces) fresh sugar snap peas, trimmed
- 1 tablespoon chopped shallot
- 2 teaspoons olive oil
- 1/2 teaspoon Italian seasoning
- 1/8 teaspoon salt
- Preheat oven to 400°. Toss together all ingredients; spread in a 15x10x1-in. pan. Roast until peas are crisp-tender, 8-10 minutes, stirring once. Yield: 2 servings.
