Roasted Potatoes Recipe

With just five ingredients, I can assemble this dish in no time, pop it in the oven and forget about it.—Christopher Gordon, Springfield, Missouri
TOTAL TIME: Prep: 10 min. Bake: 1-1/4 hours YIELD:4-6 servings


  • 5 large potatoes, peeled and sliced
  • 1 cup chicken stock
  • 1 teaspoon garlic powder
  • Pepper to taste
  • 4 tablespoons butter


  • 1. Place potatoes in a greased 13-in. x 9-in. baking pan. Combine chicken stock, garlic powder and pepper; pour over potatoes. Dot with butter. Cover and bake at 400° for 1 hour and 15 minutes. Remove cover during last 15 minutes to brown. Yield: 4-6 servings.

"My kids seemed to like the potatoes, but I didn't care for them. They did not have much flavor and seemed pretty dry. I like the idea of adding some Parmesan and other seasoning."

"Very Simple. I liked them. My son loved them. My daughter didn't like them. My husband didn't say, LOL. I put the potatoes in the pan and tossed them with a little olive oil before adding the chicken stock. Didn't have any sticking problems. Next time I will add more garlic, perhaps basil, or maybe go a different route and add Parmesan the last 15 minutes of baking or so. Good base recipe. Then just play around with what you like :)"

"This recipe was was quick and easy to prepare, but the potatoes really stuck to the dish even though I greased it very well and they didn't get brown or crispy like I expected them too."
