- 1 medium onion, chopped
- 2 tablespoons butter
- 2 cans (14-1/2 ounces each) diced tomatoes, undrained
- 2 cans (10-3/4 ounces each) condensed tomato soup, undiluted
- 1-1/2 cups milk
- 1 teaspoon sugar
- 1/2 to 1 teaspoon dried basil
- 1/2 to 1 teaspoon paprika
- 1/8 to 1/4 teaspoon garlic powder
- 1 package ( 8 ounces) cream cheese, cubed
- In a saucepan, saute onion in butter until tender. Stir in tomatoes, soup, milk, sugar, basil, paprika and garlic powder. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Stir in cram cheese until melted. Serve immediately. Yield: 8 servings (2 quarts).

"My husband says this is the best tomato soup he's ever had (and he'll be 60 this year!). I took the advice of another reviewer and added the pepper jack cheese and made a few minor changes as follows: used 1 cup of half & half, then 1/2 a cup of whole milk (instead of 1-1/2 cups of milk). Used "Hunts Diced Roasted Tomatoes with Garlic" instead of plain ol' diced tomatoes, also used the full amount of paprika and ground basil. I added 5 slices of chopped up pepper jack cheese from a 12 ounce pre-sliced package. When this was all mixed and done, I used my handy-dandy inversion blender to make the soup smooth as silk before serving This was super rich and delicious! Thanks!"
"Delicious! So easy and quick, but tastes like you've spent a lot of time and effort. I always sauté some minced garlic in with the onions as well as add cheese periogies (the frozen Mrs.T brand) at the end and let them simmer for a few minutes before serving. Along with grilled ham and cheese, it's an easy dinner that everyone really enjoys."

"I didn't really like this recipe, in a way it tasted tangy, most likely from the canned tomatoes. Might be better with more sugar. Most of it was fed to the chickens."
"I have been making this soup since it was published in 2000. It is quick and easy! Sometimes for added flavor I use the diced or petite tomatoes already seasoned with basil, garlic and oregano. It is requested at every family party during the winter months. I made it for a friend of mine who is a writer. She loved it so much she wrote a story about it! We have since renamed it, "Lick the Bowl Clean soup"!"
