Whenever we attend a picnic or family get-together, people expect me to bring these saucy meatballs and copies of the recipe. My aunt passed the recipe on to me years ago-Toni King, London, Kentucky.

Ingredients

  • 1/2 cup milk
  • 1 egg
  • 1 medium onion, chopped
  • 3 bacon strips, cooked and crumbled
  • 1/2 cup crushed saltines (about 15 crackers)
  • 2 teaspoons salt
  • 1-1/2 pounds lean ground beef (90% lean)
  • 1/2 pound bulk pork sausage
  • SAUCE:
  • 1 bottle (14 ounces) ketchup
  • 1-1/4 cups water
  • 1/2 cup white vinegar
  • 1/2 cup packed brown sugar
  • 1 medium onion, chopped
  • 1 tablespoon chili powder
  • 1-1/2 teaspoon Worcestershire sauce
  • Dash salt

Directions

In a large bowl, combine the first six ingredients. Crumble beef and sausage over mixture and mix well. Shape into 1-1/2-in. balls. Place in a greased 13x9-in. baking dish.
In a large saucepan, combine the sauce ingredients. Bring to a boil; reduce heat. Simmer, uncovered, for 5 minutes.
Pour over meatballs. Bake, uncovered, at 350° for 1-1/2 hours or until a thermometer reads 160°. Yield: 8 servings.
To quickly make saltine cracker crumbs with little mess, place the crackers in a large resealable plastic bag. Close the bag and crush with a rolling pin.

"As one person said, these are "da bomb". They really are. Every person I have served the to has demanded the recipe including a ten year old boy who insists that his Mom fix them for him as often as possible. They travel and reheat so well that I made them my traditional New baby, new home, condolence, off to college and any other reason to give a meal meal. It's always well received and enjoyed. I couldn't be more satisfied with this great recipe find."
