Refreshing Strawberry Pie

This recipe came from my mother, and it's just as refreshing when made with peaches or blueberries.—Michelle Isenhoff, Wayland, Michigan

  • Dough for single-crust pie
  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 package (3 ounces) strawberry gelatin
  • 4 cups sliced fresh strawberries
  • Fresh mint, optional


  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°.
  • Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack.
    In a small saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in gelatin until dissolved. Refrigerate 15-20 minutes or until slightly cooled.
  • Meanwhile, arrange strawberries in crust. Pour gelatin mixture over berries. Refrigerate until set. If desired, garnish with mint.
Editor's Note
Dough for single-crust pie: Combine 1-1/4 cups all-purpose flour and 1/4 tsp. salt; cut in 1/2 cup cold butter until crumbly. Gradually add 3-5 Tbsp. ice water, tossing with a fork until dough holds together when pressed. Shape into a disk; wrap and refrigerate 1 hour.

    Super easy recipe and very delicious. I added 1/2 tsp pure almond extract flavoring and 1 individual serving pkt of strawberry crystal light powdered drink mix to the gelatin mixture just to bump up the flavor a bit. Where we live, our fresh strawberries aren’t real flavorful. They are red but not much flavor.

    Loved it! Wanted to make an easy pie while recuperating from hand surgery. It was so easy and SO delicious. It was great with "grocery store" berries, am eagerly waiting for local, fresh berries. Thanks for sharing this recipe. Will also give it a try with peaches.
