Ingredients

  • 2 small onions, chopped
  • 3 garlic cloves, minced
  • 1/2 cup butter or margarine
  • 6 tablespoons all-purpose flour
  • 6 cups chicken broth
  • 1/4 to 1/2 teaspoon cayenne pepper

Directions

In a large saucepan, saute onions and garlic in butter until tender, about 2-3 minutes. Stir in flour until blended. Gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; simmer, uncovered, for 15 minutes. Stir in cayenne. Yield: 4-6 servings.

"Everyone loves this soup when I make it. I leave the chicken in and add barley to make a main course meal. I serve it with delicious, moist tea biscuits."
