- 1/4 cup cornstarch
- 2 cups cold water
- 2 cups butter (no substitutes), softened
- 2 cups sugar
- 2 teaspoons almond extract
- In a saucepan, combine cornstarch and water until smooth. Bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened. Refrigerate for 1 hour. In a mixing bowl, cream butter and sugar. Beat in almond extract. Add cornstarch mixture and beat until sugar is dissolved and frosting is fluffy. Frost cake immediately; store in the refrigerator. Yield: about 6-1/2 cups.
