Quick Bacon Potato Salad Recipe

My family was tired of the same old potato salad at family functions, so I created this with the ingredients I had on hand. Now I'm always asked to bring it to potluck gatherings. —Tami Gallagher, Eagan, Minnesota
TOTAL TIME: Prep: 30 min. + chilling YIELD:8 servings


  • 4 cups cubed red potatoes
  • 1 cup chopped onion
  • 7 Jones Dairy Farm Dry-Aged Bacon strips, cooked and crumbled
  • 2 tablespoons minced fresh parsley
  • 1-1/3 cups mayonnaise
  • 3 tablespoons grated Parmesan cheese
  • 3 tablespoons prepared ranch salad dressing
  • 2 tablespoons prepared mustard
  • 4 teaspoons white vinegar
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper


  • 1. Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain.
  • 2. In a large bowl, combine the potatoes, onion, bacon and parsley. In a small bowl, combine the remaining ingredients. Pour over potato mixture; toss to coat. Refrigerate for 1 hour or until chilled. Yield: 8 servings.

"Nice twist to traditional potato salad. After reviewing all the comments, I chose to use half sour cream and half mayo. Next time I will make less dressing. I will use the full amount of mustard, I will add a little more salt and pepper. My first batch has more dressing than we prefer... you cannot see the veggies and potatoes like shown in the picture. They are covered in dressing. I chose to add a little chopped celery to mine as well. Flavor is good. I will make this again."

"My friends and I absolutely loved this. When I read other reviews about too much mustard, I was careful to use only one tablespoon at first, but when I tasted it I definitely wanted the extra tablespoon. Delicious. I kind of missed the hard boiled eggs that are in a lot of potato salads, and will probably put those in next time. For me, the dressing amount was just right, and super creamy and delicious."

"I made this for our 4th of July family party and it was a big hit. I followed other reviewer tips and used half mayo, half sour cream and lightened up on the vinegar and mustard. I think next time I will follow the recipe on the mustard and vinegar as I think the extra zip would be good. This was great though and will be my new go to potato salad recipe."

"My daughter loves potato salad so I made it for 4th of July last year and she had two large helpings that night with our cookout dinner and then another helping for a snack later that night and more the next day. The family all loved it. It was so fresh and great combination of flavors. I have made it several more times for when we have hamburgers for dinner."

"Made this last night, and I was glad for other reviewers comments! Made the dressing with less mustard and vinegar, but I thought the amount of mayonnaise was all right because I added more potatoes, probably 5-6 cups. Then chilled the potatoes and dressing separately, this let the potatoes firm up and be able to be tossed without going mushy, and the dressing didn't absorb into the potatoes - it just coated them properly. There was no flavour sacrifice either, just let the whole thing chill again for an hour before serving. Such an awesome salad!"

"This is one of the best potato salad recipes I have ever tried. The only thing I didn't like was the intense mustard taste so I halved the amount. "I surely will be making this again. With plenty of herbs in my garden I substituted the onions for fresh chives. I refrigerated the potatoes after boiling to cool. When I put the salad together I combined all the ingredients except the potatoes. While the potatoes were still cold from the fridge I cut them and folded them into the bowl. I served it immediately and it was a huge hit. It still tasted great the next day however I thought it was better served immediately. It is very pretty as well."

"My family loved this. I substituted bacon bits for the 7 bacon strips. I only used a cup of mayo and it still made way too much dressing for my taste. Next time I will halve the dressing ingredients."
