Quick Bacon Potato Salad Recipe
- 4 cups cubed red potatoes
- 1 cup chopped onion
- 7 Jones Dairy Farm Dry-Aged Bacon strips, cooked and crumbled
- 2 tablespoons minced fresh parsley
- 1-1/3 cups mayonnaise
- 3 tablespoons grated Parmesan cheese
- 3 tablespoons prepared ranch salad dressing
- 2 tablespoons prepared mustard
- 4 teaspoons white vinegar
- 1/2 teaspoon minced garlic
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1. Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain.
- 2. In a large bowl, combine the potatoes, onion, bacon and parsley. In a small bowl, combine the remaining ingredients. Pour over potato mixture; toss to coat. Refrigerate for 1 hour or until chilled. Yield: 8 servings.
3/4 cup: 398 calories, 35g fat (6g saturated fat), 22mg cholesterol, 524mg sodium, 15g carbohydrate (2g sugars, 2g fiber), 5g protein.

"Nice twist to traditional potato salad. After reviewing all the comments, I chose to use half sour cream and half mayo. Next time I will make less dressing. I will use the full amount of mustard, I will add a little more salt and pepper. My first batch has more dressing than we prefer... you cannot see the veggies and potatoes like shown in the picture. They are covered in dressing. I chose to add a little chopped celery to mine as well. Flavor is good. I will make this again."

Made the dressing with less mustard and vinegar, but I thought the amount of mayonnaise was all right because I added more potatoes, probably 5-6 cups. Then chilled the potatoes and dressing separately, this let the potatoes firm up and be able to be tossed without going mushy, and the dressing didn't absorb into the potatoes - it just coated them properly. There was no flavour sacrifice either, just let the whole thing chill again for an hour before serving. Such an awesome salad!"

"I surely will be making this again. With plenty of herbs in my garden I substituted the onions for fresh chives. I refrigerated the potatoes after boiling to cool. When I put the salad together I combined all the ingredients except the potatoes. While the potatoes were still cold from the fridge I cut them and folded them into the bowl. I served it immediately and it was a huge hit. It still tasted great the next day however I thought it was better served immediately. It is very pretty as well."
