I was so hungry for pumpkin--this was so delicious! I used regular milk instead of soy; and added applesauce and raisins. Thank you, Amber, for sharing this recipe.

I made this recipe using vanilla almond milk instead of soy. I also doubled the pumkinpie spice, added additional cinnamon, then added some pecans that I cooked in a bit of melted butter and a sprinkle of brown sugar.Additionally, I doubled the recipe, put one portion in a bowl to eat, then divided the rest between 3 Mason Jars so I would have a grab and go breakfast for the next few days. Very good!

I've made this several times now, making adaptations on occasion. It's fabulous every time. It is even good reheated for a snack. Today I used Eggnog instead of water, and used double the amount of pumpkin and spice. It was soooooo good! I like the toothy texture of the old fashioned oats rather than quick cooking, and may not have tried it if the recipe was not written using old fashioned. Thanks!!

My kids and I love this recipe! Great fall breakfast. The flavor is very much like pumpkin pie. Yummy!

Absolutely delicious. I wish I had thought of this one! Almost made exactly except I used skim milk, brown sugar and more brown sugar when eating it. I am going to make additional servings to keep in refrigerator, it heats up quite well in the microwave with additional skim milk.

I had a taste for something pumpkin today so I decided to make this because it was easy and quick. YUM! It was creamy and delicious and full of good pumpkin flavor. I used regular milk and 1 Tbsp. of honey and it was still slightly sweet and yummy. I will make it again really soon!
