Pumpernickel Caraway Bread
This rich, dark bread has an old-fashioned homemade taste that's oh-so-satisfying. Made with molasses and caraway seeds, it's moist and flavorful. My family prefers slices of it slathered with apple butter or cream cheese.

I love this bread recipe for toasting, slathered with peanut butter. I have also prepared the dough, and followed steps to make bagels with it for breakfast. Great recipe, full of flavor.
I made the dough in my bread machine, but shaped and baked the bread separately (I like a round shaped loaf). This recipe is perfect and will be my go-to bread for reuben sandwiches and as a boule for spinach dips in the future.
Made this bread last night and it was perfect. I’ve tried numerous recipes trying to get the right texture and taste to no avail. I’m happy to say the search is over. The loaf is small but that works perfectly for me because I am in a one person household. Definitely a must try. Thank you for this little slice of goodness.
I liked this simple pumpernickel bread. I would probably increase the rye flour a little next time, I wanted it to have a little more of that richness. I didn't have instant coffee so brewed strong coffee and swapped out a little of the water.
I made this just as recipe stated. It did seem moist so I added 4-6 more TBSPs of flour and baked it a little longer. Texture and flavor was fabulous (it smells of chocolate when baking but doesn't taste it or coffee). It is a small loaf but I found it rose to top of loaf pan. EXCELLENT recipe!
Sorry I deleted my post as I misread the recipe. It only has 2 C flour + 2 T cornmeal so I will follow said recipe as written. Making it now. I usually make a larger loaf but will do this small loaf and then tweak it to better suit my bread machine.
This bread has great flavor and texture. It's a small loaf, but slices well and was perfect for corned beef sandwiches. When I checked dough after 5 minutes mixing in the bread machine, it was just right. Didn't have to add flour or water.—Ann, Hartland WI
I've made this recipe twice now, and while it tasted pretty good, it did not rise well; I am not sure why.
I am not fond of coffee and I didn't have instant coffee granules in the house so I made it without. It turned out very well. I did need to add quite a bit of extra flour as the dough was very moist.
