Ingredients

  • 1 to 1-1/2 pounds beef top round steak
  • 1 jar (16 ounces) salsa
  • 1 medium sweet potato, peeled and chopped
  • 1 large carrot, thinly sliced
  • 1 garlic clove, minced
  • Lime wedges
  • Chopped fresh cilantro, optional

Directions

  1. Cut steak into thirds; place in a 6-qt. electric pressure cooker. Add salsa, sweet potato, carrot and garlic. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 10 minutes. Let pressure release naturally.
  2. Slice steak. Serve with vegetables. Garnish with lime wedges and, if desired, chopped cilantro.
For Stovetop Pressure Cooker
Follow instructions placing all ingredients in a stovetop pressure cooker. Close cover securely according to manufacturer’s directions; place pressure regulator on vent pipe. Bring cooker to full pressure over high heat. Reduce heat to medium-high and cook 10 minutes. (Pressure regulator should maintain a slow steady rocking motion or release of steam; adjust heat if needed.) Remove from heat. Allow pressure to drop on its own. Proceed with directions.
