Potluck Macaroni and Cheese Recipe
- 3 cups uncooked elbow macaroni
- 1 package (16 ounces) process cheese (Velveeta), cubed
- 2 cups shredded Mexican cheese blend
- 2 cups shredded white cheddar cheese
- 1-3/4 cups whole milk
- 1 can (12 ounces) evaporated milk
- 3/4 cup butter, melted
- 3 large eggs, lightly beaten
- 1. Cook macaroni according to package directions for al dente; drain. Transfer to a greased 5-qt. slow cooker. Stir in remaining ingredients.
- 2. Cook, covered, on low until a thermometer reads at least 160°, 2 to 2-1/2 hours, stirring once. Yield: 16 servings (3/4 cup each).
3/4 cup: 388 calories, 28g fat (17g saturated fat), 122mg cholesterol, 652mg sodium, 16g carbohydrate (6g sugars, 0 fiber), 17g protein.

"Made this yesterday for the first time. I used cavatappi pasta. When using a larger size pasta shape such as cavatappi, increase the amount to about 5 cups. I followed the sauce recipe exactly as written, but I melted the ingredients in a saucepan first. I added the al-dente pasta to the greased crockpot, then mixed in the creamy sauce, then stirred in the eggs. Doing it this way, serve after an hour. My crockpot runs somewhat hot on low setting, so when I make this again I will turn it down to warm setting after one hour. It was a big hit at our wiener roast cookout last night."
"The taste of this recipe is fantastic. I made it with the exact recipe & was very happy with it! The only issue I had with it was the mixing of the ingredients at the beginning & in the middle...There was so much heavy cheese, trying to combine it my noodles were starting to get crushed (especially the half way point). I did a whole box of noodles al denti (actually went under the box cook time of al denti) & by the end of the 2 1/2 hour mark on low they were a little too mushy, especially because the sauce is SO thick. Also, the cheese was barely melted at that time...This is a keeper for me & I'm going to try to adjust a few small things (no one else seemed to have these issues in reviews, so may have been operator error!) The cheese amount seems crazy when making it but the taste is really great! This is a great crock pot Mac & Cheese recipe."
"Love this mac n cheese! I am a big Mac n cheese lover and have tried tons of recipes. This is one of my top 2! Definitely #1 for creaminess and an easy crockpot recipe. The only change I make is to add more macaron and sometimes I do all sharp cheddar. I usually do 1 1/2 the suggested amount- around 1lb of noodles (4 1/2ish cups dry). It's still plenty creamy and delicious- you could even double the noodles for a bigger crowd. Not a diet food for sure but pure delicious comfort food!"

Incredibly creamy and delicious. My only wish is that I had boiled the noodles about 3 minutes less. They weren't mushy, or anything, but since this was for a potluck, I had turned it off 30 minutes before lunch to keep them from turning too mushy. "Hands down best macaroni and cheese I have ever tasted. I had to bring the Macaroni and Cheese to a company Christmas potluck and I wanted one I could make in the crock pot. So I began searching Google for recipes and I tried making one and it tasted okay but the consistency was not good. So I found this one and decided to give it a try, it was so easy to make and I threw it all together in the morning, put it in the fridge (before cooking it) for a couple of hours and then I took it out and brought it to work with me. "This is hands down my family's favorite mac & cheese. I use 2 1/2 cups elbow mac, Velveeta shreds and medium cheddar as the white cheddar has a sharp, unpleasant taste. I stir it about half way through, adding an additional 5 oz can of evaporated milk. Otherwise, it's pretty thick and kind of gloppy. Super flavor and really easy. Feeds a lot of people so it's perfect for holidays & reunions."

"Like many other reviewers, I made this for a work potluck and couldn't believe how fast it went. Everyone crowded around the crockpot, kinda made me feel bad for the other dishes. **Changes I made as this was for adults, I used Pepper Jack cheese instead of Mexican cheese, and Sharp cheddar instead of white cheddar, egg substitute (3/4 c.) and a few splashes of hot sauce of your choice!! Nice because you can cook pasta night before, mix everything together in the morning and when you get to work put it on low for 2-3 hrs. Comes out perfect and hot for the potluck. I haven't used the crockpot liners before, but might next time. It was a HUGE success. Also I have very picky kiddos and they loved it."

"I made this for a party at work and it was a HUGE hit! I followed the recipe, except I used 4 cups of pasta or 1 lb instead of 3 cups. And the last 1/2 hour I sprinkled about 1/2 of a cup of seasoned bread crumbs with about a 1/2 cup of additional butter. All I can say is OMG! My friends were scraping the crock pot to get every last bite. I cooked the pasta the night before and put all the other ingredients in another container and then cooked it at work. I did not melt the butter, I just cubed it. The next time I made it I used a cooking bag and the clean up was so much easier. My friends call it crack or a heart attack in a spoonful. Enjoy"
