Potato-Sausage Foil Packs Recipe
- 1 medium green pepper
- 1 medium sweet red pepper
- 1 medium sweet yellow pepper
- 1 package (14 ounces) smoked turkey kielbasa, sliced
- 2 large potatoes, cut into wedges
- 1 medium onion, chopped
- 4 teaspoons lemon juice
- 4 teaspoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon pepper
- Lemon wedges, optional
- 1. Cut peppers into 1-in. pieces; place in a large bowl. Toss with remaining ingredients. Divide mixture among four double thicknesses of heavy-duty foil (about 18x12 in.). Fold foil around mixture, sealing tightly.
- 2. Grill, covered, over medium heat until potatoes are tender, 30-35 minutes. Open foil carefully to allow steam to escape. If desired, serve with lemon wedges. Yield: 4 servings.

"It is becoming more difficult to find recipes for just one person, but this one was easy to cut down for a nice portion with some leftovers for lunch the next day. I used one large cooked beer brat instead of the kielbasa, just one/half of one green pepper and added some sliced carrots and yellow squash, and a dash of hot sauce. I "grilled" in one packet in the oven (350?) and was thrilled with the results."
