  • 1 tablespoon butter
  • 2 cups cubed peeled potatoes
  • 5 ounces SPAM luncheon meat, finely chopped
  • 3/4 cup 2% milk
  • 1 small onion, chopped
  • 1 tablespoon minced fresh parsley
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt


  • 1. In a large skillet, melt butter over medium-high heat. Stir in the remaining ingredients. Cook and stir for 10-12 minutes or until browned and potatoes are tender. Yield: 2 servings.

"I fried the spam a little before adding the other ingredients so render some of the fat out of it. Otherwise it was good."
