Poached Salmon with Dill Sauce

Add salmon, know for its omega-3 fatty acids, to your dinner rotation. This tender poached salmon gets extra flavor from a creamy classic dill sauce. —Patti Sherman, Schenectady, New York

Ingredients

  • 2 cups water
  • 1 cup white wine or reduced-sodium chicken broth
  • 1 medium onion, chopped
  • 1/4 cup chopped celery
  • 4 salmon fillets (6 ounces each)
  • SAUCE:
  • 1/4 cup reduced-fat sour cream
  • 1/4 cup plain yogurt
  • 2 teaspoons snipped fresh dill
  • 1-1/2 teaspoons Dijon mustard
  • 1/4 teaspoon salt
  • Dash hot pepper sauce

Directions

  • 1. In a large skillet, combine the water, wine, onion and celery. Bring to a boil. Adjust heat to maintain a gentle simmer. Add salmon. Cook, uncovered, until fish just begins to flake easily with a fork, 8-12 minutes.
  • 2. Meanwhile, in a small bowl, combine sauce ingredients. Serve with salmon.
