Poached Salmon with Dill Sauce

Add salmon, know for its omega-3 fatty acids, to your dinner rotation. This tender poached salmon gets extra flavor from a creamy classic dill sauce. —Patti Sherman, Schenectady, New York
Ingredients

2 cups water

1 cup white wine or reduced-sodium chicken broth

1 medium onion, chopped

1/4 cup chopped celery

4 salmon fillets (6 ounces each)

SAUCE:

1/4 cup reduced-fat sour cream

1/4 cup plain yogurt

2 teaspoons snipped fresh dill

1-1/2 teaspoons Dijon mustard

1/4 teaspoon salt

Dash hot pepper sauce
Directions

In a large skillet, combine the water, wine, onion and celery. Bring to a boil. Adjust heat to maintain a gentle simmer. Add salmon. Cook, uncovered, until fish just begins to flake easily with a fork, 8-12 minutes.

Meanwhile, in a small bowl, combine sauce ingredients. Serve with salmon.
