Pineapple Smoothie Recipe

"I got this recipe over 20 years ago," reports Margery Bryan of Royal City, Washington. "I've tried several diabetic recipes, and this is one of the best."
TOTAL TIME: Prep: 5 min. + freezing YIELD:5 servings


  • 1 can (20 ounces) unsweetened pineapple chunks, undrained
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 teaspoons sugar substitute
  • Mint leaves, optional


  • 1. Drain pineapple, reserving 1/2 cup juice. Freeze pineapple chunks. Place the juice, buttermilk, vanilla, sugar substitute and frozen pineapple in a blender; cover and process until smooth. Pour into glasses and garnish with mint if desired. Serve immediately. Yield: 5 servings.

"Delicious!! This is a keeper. I only froze half the pineapple chunks (just refrigerated the rest) and it turned out great. I also used all the juice from the can. Refreshing, light and will definitely make again."

"My husband is a diabetic and he hates buttermilk. He drank this smoothie and absolutely loved it! I didn't tell him it had buttermilk in it. lol So easy if you remember to put the pinapple in the freezer the night before."
